Freedoom
Here's one for the nostalgics out there: Freedoom let's you play a completely Free (and strikingly similar) version of the classic FPS Doom. It contains new data for textures, weapons, monsters, UI, sounds and more, designed to look and feel like the classic while still being a Free replacement. It all looks very nice, and while every little thing has yet to be replaced, the project is almost complete and fully playable. To run it you will need to pair the Freedoom data with an engine, and depending on which engine you use you can get some cool modern graphics-effects to go into the mix. Of course, experiencing the game in its classic low-res glory is still possible.
